Jane’s Irish Shortbread

Lauren brought these cookies last year to the Christmas Cookie party. I am not sure who Jane is. Maybe a grandmother, or aunt, or somebody related to Lauren. I should probably ask her.

I love shortbread, so I think these were my favorite. No offense to everyone else. It is just that my love for shortbread is so strong!

makes 18-22 cookies
1 1/4 cups flour
1/3 cup sugar
1 stick (1/2 cup) butter, cut into pieces

Combine flour and sugar in bowl and rub in the butter until mixture resembles course meal.

On a lightly floured surface knead the mixture until it forms a smooth dough.

Roll out slightly less than 1/4 inch thick and, using a 2 1/2 inch round cutter, cut out as many rounds as possible, re rolling the scraps and cutting out more rounds.

On ungreased baking sheets arrange the rounds about 1 inch apart and bake in the middle of a preheated 350 oven for 12 to 15 min. until bottoms are golden.

Transfer to racks and let them cool.

(For those strapped for time: I used the mixer, then put it right into a square 9 inch pan, pressed it down and baked it at 325 for 20 minutes. Then I cut it into squares. This took a lot less time!)
