Peanut Butter and Jelly Ice Cream

I love Pb. We know this. And I love ice cream, which you may or may not know. But I am picky about what peanut butter I like. I really do not like the sugar, partially hydrogenated pumped stuff (Jiff, Peter Pan, Skippy, you know, those crappy ones).
My favorite kind is the organic stuff from Costco. They sell it in a double pack. So you have plenty of peanut butter to last… at least 2 weeks (for me anyways). Like I said, I really like the stuff. And if it is only peanuts, whats not to love about it? Healthy fats and protein.
It is perfect for sauces, dipping with apples, cookies, or spreading on homemade bread. Or making ice cream!!!!!!

1/2 cup heavy cream
1 1/2 cups 1% milk
1 cup smooth peanut butter (I used Costco organic creamy PB)
1/2 cup sugar
pinch of salt
1/2 cup Trader Joe’s Blueberry Sauce (it’s almost like a blueberry syrup)
* I love this blueberry sauce. I pour it on top of greek yogurt, plain vanilla ice cream, pancakes, pound cake, and so many other things…

Bring the milk, cream, sugar and salt to a roaring bowl. Then remove it form the heat and whisk in the peanut butter. Whisk the pb in until it is smooth and completely incorporated (it takes a couple minutes). Transfer to a glass bowl, cover and put in the fridge until it is chilled. Takes about 2 hours.

Churn/Freeze according to manufactures instructions.

Layer in a container with the blueberry sauce; ice cream, blueberry sauce, ice cream, blueberry sauce, ice cream. This will give it the blueberry swirl when it is scooped out.
*You can drizzle a bit of blueberry sauce on the top layer to make it look pretty. I always like to showcase all the ingredients used in the dish, on the top of my dishes and desserts.

I even made some brown sugar croutons to garnish it with. But they needed to be soggy in order to taste good, so I didn’t put them in the ice cream. But I am determined to make a pb&j sandwich ice cream, with croutons!

Everyone who tried this ice cream (co-workers and bible study) were skeptical at first. But after they tried it they all agreed it far exceeded their expectations and they even went back for seconds!
