Caprese Panzanella

Panzanella Salad is a Tuscan salad made from day old crusty bread. You can add almost any veggies you want to make it the way you like it. This recipe is the way I prefer it. Try sage instead of basil. Or roasted zucchini and bell peppers instead of tomatoes. And adding some sliced red onions would be fantastic!

Serves 4
4 tomatoes, cubed
1/2 cup basil leaves, julienned
3/4 loaf Italian white bread, cubed
6 ounces buffalo mozzarella, cubed
olive oil
balsamic vinegar
salt & pepper to taste

1. Heat a bit of olive oil in a pan and saute the pieces of bread until they turn slightly golden.
2. Combine tomatoes, basil, mozzarella, and sauteed bread. Drizzle with olive oil and balsamic vinegar and season with salt and pepper.
3. Serve immediately!
