Crockpot Chicken Tacos

We are having Taco Tuesday at our house this week. And I really don’t want to slave over a stove or a grill. I want to just come home and enjoy the company and the food. This recipe is perfect for that! It is so easy and it tastes so great. Really, for how simple it is the taste is incredible.

Serves 6-8
4 boneless skinless chicken breasts
32 ounces salsa (I use 2- 16 oz. jars)
1 packet low sodium taco seasoning mix
1 (14 1/2 ounce) can corn, drained
1 (14 1/2 ounce) can black beans, drained
10-12 Whole Wheat Flour Tortillas
Sour Cream
Cheese
Lettuce
Tomatoes

Put the chicken in in the crock pot; top with the salsa, taco seasoning, beans and corn. Cook on low for 6-8 hours.
About 30 minutes before you serve the chicken, shred it and put it back in the crock pot until ready to serve.
Make your tacos however you like them, and enjoy!
You can also serve this as a taco salad or over just plain white rice.
