Strawberry Spinach Salad

VINAIGRETTE
2 tablespoons champagne vinegar
1/2 cup olive oil
1/2 teaspoon honey
1/8 teaspoon salt
1/8 teaspoon fresh ground black pepper

SALAD
10 ounces baby spinach, washed and patted dry
2 cups strawberries, quartered
1 avocado, thinly sliced
1/4 cup rough chopped walnuts, toasted
3 tbsp fresh chopped parsley

1. Dressing: In the small bowl, whisk together the champagne vinegar, olive oil, honey, pepper and sea salt.

2. Salad: In the salad serving bowl, toss the ingredients: baby spinach, strawberries, avocado slices, and walnuts. Serve with the vinaigrette drizzled on top.
