Tamale Casserole

I made this for a Saturday lunch this past weekend. My dad and step mom were coming over. My dad was going to fix our dryer and my step mom was going to sit and knit a little sweater she is making. So while they were occupied, I whipped up this little delight. It is extremely easy and so tasty. I think the whole meal costs around $8 and fed 4 people, plus leftovers for 2 people the next day.

1 can pint beans, drained
1 can black beans, drained
1 can diced tomatoes, drained
1 can corn, drained
1 lb extra lean ground beef (or ground turkey or tofu)
1 tsp ground cumin
1 tsp salt
1 tsp black pepper
1/2 tsp paprika
1/2 tsp onion powder
1 tsp garlic powder
1/4 c. chopped fresh cilantro
1 box corn bread mix (Trader Joe’s is my favorite)Mix it according to package instructions
3/4 cup cheddar/jack mix cheese

Pre heat the oven to 350 degrees.

While the oven is warming, brown the ground beef in a large skillet. Once it is browned, add the beans, tomatoes, corn, cilantro and spices to the skillet. Cook for about 5 minutes. Just for the flavors to combine.

Pour mixture into a 13×9 inch casserole dish. Top with 1/2 cup cheese. Then pour as much of the corn bread mix as will fit into the dish. Leave about 1/2 an inch from the top. As the corn bread will rise slightly.

Bake for 25-30 minutes, or until the corn bread has started to brown. Sprinkle the remaining cheese on top and bake for another 5 minutes.
Cut into squares and serve immediately.

*I use some of the remaining corn bread mix to make a couple corn bread muffins. They are great for an afternoon snack or to use with dinner or breakfast the next morning.
