Blueberry Cornbread

These were only okay. I am not gonna lie. Sure, throw a slab of butter on some warm cornbread and we all love it. I am still working on the perfect recipe. Although, these were totally edible and enjoyable. Just not perfect.

1 large eggs
1 c. milk
1/2 c. applesauce
1 c. all-purpose flour
1 c. yellow cornmeal
1/4 c. honey
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup fresh blueberries, rinsed

Preparation
1. In a bowl, beat egg, milk, honey and applesauce to blend. In another bowl, mix flour, cornmeal, baking powder, and salt.

2. Stir flour mixture into egg mixture just until evenly moistened. Gently stir in berries. Pour into greased muffin tins.

3. Bake in a 375° oven until a wooden skewer inserted into the center comes out clean, 20 to 25 minutes. Let cool 10 minutes.
