Sweet Potatoes with Caramelized Bananas

Sweet potatoes are my absolute favorite dish at any holiday meal. And no holiday meal is complete without them. My favorite way is mashed with caramelized bananas and toasted pecans on top. MMMMMM!

Added on Nov. 24, 2009: I am bringing these to my families house for thanksgiving in 2 days. I can’t wait to eat them. I might even throw some cream cheese in the mixture and bake it in a pie crust. A sweet potato caramelized banana pie. Oh my!

Serve 8
3 lbs sweet potatoes, washed
2 tablespoons honey
1/4 c. brown sugar
2 tablespoons butter
1 teaspoon cinnamon
1/4 tsp nutmeg
1/4 c. orange juice
1/4-1/2 cup milk (I use 1%)
1/2 c. non fat greek yogurt (I like to use Trader Joe’s Organic Vanilla)
1/8 teaspoon salt
1/4 cup chopped pecans
2 bananas, peeled and sliced

1. Bake the sweet potatoes in the oven at 400 degrees until they are soft. About 1 hour. Take them out and allow them to cool until you can touch them. Peel off the skins.

2. With a hand mixer, mash the sweet potatoes. Add the butter, honey, orange juice, yogurt, milk (start with 1/4 cup)cinnamon, nutmeg and salt. If the potatoes are too thick, add some more orange juice or milk.

2. Heat oven to 350°F. Grease 12×8-inch (2-quart) glass baking dish. Smooth sweet potatoes in the baking dish.

2. Lay the bananas on the sweet potatoes. Sprinkle with the brown sugar and pecans.
3. Bake at 350°F. for 20-25 minutes or until the brown sugar is bubbly.
