Goddess Garden Salad

This salad is just too easy. Perfect for company, a quick last minute get together. Or just a cheap convenient meal. I found it on the Pillsbury website.

Serves 8
2 cups frozen broccoli florets, thawed, rinsed
1 bell pepper, julienned (yellow or red)
1 zucchini cubed
1/2 cup green onions, chopped
1 cup cherry tomatoes, halved
1 cup sliced carrots
1/2 cup purchased Goddess salad dressing
1/4 cup non fat greek yogurt

1. Preheat oven to 400 degrees. Arrange sliced carrots and cubed zucchini in a single layer on a cookie sheet. Drizzle minimal olive oil on them, sprinkle with a little salt and pepper. Bake for 20-25 minutes. Just until they are slightly tender. All them to cool completely.
2. In large glass bowl, layer carrots, zucchini, cherry tomatoes and bell peppers.
3. Mix goddess dressing and greek yogurt, pour over salad. Top with broccoli and green onion. Cover; refrigerate at least 1 hour to marinate before serving.
