Banana Pecan Bread

I absolutely love banana bread. And I love adding nuts, chocolate chips, caramel, coconut, or anything else I have on hand that looks good. But for this particular time, I only wanted to add nuts.

2 cups whole wheat flour
1/2 cup light brown sugar
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup pecans, coarsely chopped
2 very ripe large bananas, mashed
2 large eggs, lightly beaten
1/2 c. unsweetened applesauce
1/3 cup non fat greek yogurt
1 teaspoon pure vanilla extract

Preheat oven to 350 degrees. Coat a loaf pan with non stick spray.

Mix yogurt, eggs, applesauce, vanilla, brown sugar and bananas.

Add the baking soda, baking powder, salt, and flour. Fold in the 3/4 c. chopped pecans at the end. Do not over mix the dough. It will become rubbery.
Pour batter into loaf pan. Sprinkle with remaining pecans.

Bake for 60-70 minutes. or until a knife inserted comes out clean. Cool on a wire rack. Store in an airtight container in the fridge.

I had to take a bite out of it, so you can see my little teeth marks 🙂
