Cheesy Creamed Spinach

This is a low fat version of a very very fatty, but so tasty dish. You can use some sour cream or ricotta instead of all cottage cheese. I just happen to have only cottage cheese at home.


1 bag fresh spinach
2 tablespoons olive oil
1 tablespoon minced garlic
1 cup non-fat cottage cheese
1/4 cup shredded mozzarella cheese
1/4 c. parmesan chese
salt and pepper

1. Cook spinach in olive oil and garlic.
2. When cooked remove from heat and add remaining ingredients (except for the parmesan) and mix well.
3. Return to heat just long enough to heat through.
4. Add more mozzarella to taste if needed. Top wth parmesan cheese and serve.
