Chicken Tortilla Chili

I was making Chicken Tortilla Soup in the crockpot for dinner yesterday. But when Jon ate it he said it tasted more like chicken chili. So, that is how I came up with the name of the recipe. It was really good. Satisfying yet extremely light. I made some cornbread to go on the side. Trader Joe’s has THE BEST corn bread mix. i use apple sauce instead of oil, and non fat milk. The muffins turn out sweet, as if they had honey in them.

Serves 4
2 chicken breasts, diced into small bite sized cubes
1 can diced tomatoes
1 can black beans, drained
1 can kidney beans, drained
1 can corn, drained
2 c. chicken stock
1 tsp cumin
1 tsp black pepper
1/2 tsp cayenne pepper
1/2 tsp salt
1/4 c. fresh cilantro, chopped

Garnish
crushed tortilla chips
shredded cheddar cheese
sour cream

Put all ingredients in a crockpot, except the cilantro. Cook on low or 8-10 hours. Add the cilantro about 30 minutes before eating.
Garnish, and eat.
Basically, turn it on low when you leave for work, and eat it when you get home.
