Chocolate, White Chocolate, Macadamia Popcorn Balls

This Sunday we were just lounging around watching movies. And I got a craving for popcorn and chocolate chips. In the cupboard next to the chocolate chips were white chocolate chips. So I threw those in the bowl too. Holy Cow, I was in heaven. It hit the spot!!! And that was my inspiration for these popcorn balls.

Makes 24 popcorn balls
6 ounces white chocolate chips
4 cups popped popcorn (the low fat, low butter, low salt kind. There are so many other ingredients added, you won’t know the difference)
3 tbsp butter
1 10 ounces mini marshmallows
1/3 c. chopped macadamia nuts
1/2 c. mini chocolate chips

Melt butter in a large pan over low heat. Add marshmallows and white chocolate; cook, stirring until melted.

Remove from heat; stir in macadamia nuts, popcorn and mini chocolate chips. Shape into balls using a 2-inch ice-cream scoop coated with cooking spray. Transfer to baking sheet lined with parchment paper. Let stand 30 minutes. Can be stored airtight up to 1 day.
