Goat Cheese Spinach Pizza

Posted on February 15, 2009. Filed under: pizza |

I am making this for a bridal shower this week. The bride LOVES spinach. And just a spinach salad won’t due. But a spinach pizza will!

1 pre-made Whole Wheat Pizza crust (Costco had 3 for $9.99, including pizza sauce)
1/2 c. pizza sauce
10 ounces baby spinach leaves
1 c. mozzarella cheese
1/2 c. goat cheese
1 can diced tomatoes, drained
1 c. sliced mushrooms
Olive Oil

Pre heat oven to 375 degrees.

Drizzle olive oil on a baking sheet. Put the pizza crust on top of the oil.

Spread the sauce on the crust, then put the spinach on top of the sauce. Sprinkle the mushrooms, diced tomatoes and mozzarella evenly on top of the spinach. Top with chunks of goat cheese. Sprinkle with salt and pepper as desired.

Bake for 12-20 minutes. or until toppings are wilted and melted.
