Beef Stew

Since it has been so cold outside, the desire for warm comfort food has increased. And everything about beef stew is comfort food to me.

Serves 4
1 lb sirloin, chopped into bitesized cubes
2 cans diced tomatoes, drained
1 red onion chopped
2 c. chopped carrots
1 pint mushrooms, sliced
1 1/2 c. pre cooked brown rice
1 zucchini, sliced
1 green bell pepper, chopped
1 tsp dried thyme
2 c. beef broth
1 tbsp real bacon bits
1/2 tsp salt
1/2 tsp black pepper

Throw all ingredients (except rice) in a crock pot. Cook on low for 6-7 hours.

Add rice about 30 minutes before serving.

Serve in large stew bowls with some crusty bread and enjoy.
