Greek Scramble

I made this for breakfast this morning. I had been out of town for 5 days, and needed to go grocery shopping. But I managed to find these items in the fridge and they made me very happy this morning.

1 egg
2 egg whites
1 tsp heavy cream
1/4 orange bell pepper, chopped
1/4 zucchini, chopped
1/2 tsp Greek Seasoning
1/4 c. shredded Sheep’s Milk Gouda
pam

Spray pam in a saute pan. Saute the veggies and the seasoning over medium heat for about 5 minutes. Or until the veggies are tender.

Whisk the eggs and heavy cream in a small bowl. Add them to the sauteed veggies. Cook until eggs are scrambled and done to your liking.

Top them with the cheese.

Eat immediately.

This is so satisfying. It is easy, healthy and so filling.
