"Clean Out the Pantry" Orzo Pasta Salad

One of my most joyful moments in life is when food is eaten. And not just watching someone inhale a Big Mac, but watching them eat food that was made using the best resources possible. For example, scrounging through your cupboards and panty and using what you have on hand to make a dish that is great tasting and great looking. This is a dish where all the ingrediants can easily be substituted with something else form your panty.

Serves 8-10
1 lb orzo pasta
1 can peas, drained
1 can green beans, drained
1 can diced tomatoes, drained
1 c. mozzarella cheese, cubed
1 small red onion, chopped
1 can garbonzo beans, drained
1 tbsp olive oil
1 tbsp white wine vinegar
1 tsp salt
1 tsp black pepper
1 tbsp dill
1/3 c. green onion, chopped

Cook the pasta according to package instructions. When it is cooked, rinse it in cold water to stop the cooking process.

Toss all the ingredients in a serving bowl. You can serve immediatly or chill in the fridge for a few hours.
