Butternut Squash and Pasta Gratin

Serves 4
1 can (16 oz) organic pureed butternut squash
2 c. mozzarella cheese, shredded
1/4 c. chopped fresh basil
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tbsp bown sugar
1/4 c. heavy cream
4 lasagna noodle sheets (Trader Joe’s no boil is what I use)

Even though the noodles are no boil, I boil them for just a minute. Until they are just under done.

Mix the butternut squash, 1 1/2 c. mozzarella, nutmeg, cinnamon, 3 tbsp basil, and heavy cream.

Grease a loaf pan. Preheat the oven to 350.

Spread some of the butternut squash and cheese mixture on the bottom of the pan. Just enough to coat it. Then lay 1 lasagna noodle. It wont fill the whole pan, but thats fine.
Then another layer of the butternut squash mixture. Do this for 3-4 layers. On the top layer, top the pasta with the remaining cheese, basil and brown sugar.

Bake for 30 minutes. or until the cheese is brown and bubbly. Serve immediately.
