Berry Salad

Posted on January 30, 2009. Filed under: Salads |

Our bible study frequently partakes in meals together. And we usually have a theme for the food. We have done Mexican, Italian, Southern, BBQ, and this time it was foods that start with the letter “B.” There are a lot of foods that start with B. So I made a Berry salad. Close enough, right?

Serves 8
4 cups chopped romaine lettuce
1 pint sliced strawberries
1 pint blueberries
1 pint blackberries
1 pint raspberries
1 c. cubed mozzarella
1 avocado, diced

Dressing:
1/2 c. vanilla yogurt
1/8 tsp cinnamon
1 tsp orange juice
1 tbsp honey
2 tbsp vegetable oil

I just dumped all the salad ingredients in a bowl and sort of tossed them together. And then mixed the dressing ingredients and let people put on their own dressing.

No one had ever had a salad with yogurt as the base for their dressing. let alone a sweet yogurt. It was very refreshing and delicious. i ate it for lunch the next day, and just devoured it.
