Broccoli and Gouda Frittata

Super easy to make in the morning or at night for a quick dinner. You can substitute the cheese and veggies for whatever you have on hand. No matter how much cheese you add, this is still better then a drive thru dinner. And it takes about the same amount of effort and time.

Serves 8
1 c. broccoli florets chopped
1 1/2 c. smoked sheep’s milk Gouda, grated
1/2 c. tomatoes chopped
8 eggs
1/2 c. non-fat milk
1 tsp black pepper
1 tsp fresh chopped dill
1/2 tsp salt

Preheat oven to 350
Spray Pam in an oval baking dish

Beat the eggs, milk, salt, pepper and Dill with a fork for 30 seconds.
Pour the eggs mixture into the baking dish. Pour the cheese, broccoli and tomatoes on top of the egg miture. bake for 30-40 minutes. Until the center is set and the top is golden brown.

Serve hot, or warm or cold. It is great for breakfast, brunch and dinner. I have entertained using it for all 3, and it is always a hit.

* It will puff up a lot. So make sure you leave about an inch of room on the top of the dish when you pour the eggs in. It eventually falls when you take it out of the oven.
