Breakfast Rice Cakes- Gluten Free

This is my favorite breakfast! My mom would make this anytime we had leftover rice. So at dinner time, we would beg her to make extra rice in anticipation of breakfast. My favorite is with cinnamon, nutmeg and maple syrup. See, my whole life I have always been thinking about the next meal. Here are many variations of this:
– add cinnamon and nutmeg to the batter and top with butter and maple syrup
– add some salt and pepper and serve with eggs and bacon
– add dried fruit and cinnamon to the batter and topped with a little honey

This is just the basic recipe. Add whatever flair you want.

2 c. cooked white rice
3 eggs
1 tbsp butter
cooking spray

Beat the eggs and butter and stir them into the rice.
* if mixture seems too dry and rice not fully coated, add another egg

On a lightly-greased griddle set to medium-high heat, drop batter by large spoonfuls to make the rice cakes. Cook until golden brown on both sides.
